Smoked tofu and apricot veggie burgers

 Serves 4

1 red onion, peeled and roughly chopped
2 celery sticks, roughly chopped
120g smoked tofu
2 garlic cloves, peeled
4 tablespoons of soya or groundnut oil
110g dried apricots, roughly chopped
60g fresh white breadcrumbs
1 egg
½ teaspoon chopped sage
½ teaspoon chopped thyme
Plain flour for dusting
Salt and pepper.

In a frying pan over a medium heat add 2 tablespoons of the oil and then the onion, celery and garlic cook for 4 minutes. Add the apricots and cook for a further two minutes.

Remove from heat and place in a blender add the tofu (dry off any excess liquid and tear into pieces) and pulse till you get a chunky paste, season to taste.

In a bowl add the egg, sage, thyme, breadcrumbs and mix together. Add the paste to the egg and herb breadcrumb mix and fold in till all evenly combined.

Divide into for and using some flour mould the mix into burger shapes.

In a hot frying pan heat the remaining oil and add the burgers cook for about 6 minutes or until golden all over and serve.
