Sausage & Cranberry Rolls


  • 375g pack ready rolled Puff pastry
  • 400g sausage meat or your favourite sausages with skins removed
  • 1 clove garlic
  • 1 tbsp. chopped thyme
  • 50g cranberries fresh or frozen, (optional)
  • Salt and pepper seasoning
  • 1 egg beaten



Pre heat oven to 180oc

Grate the garlic on a super fine grater or use a large knife to crush and mince the clove, chop the thyme then mix with the garlic into the sausage meat add some seasoning.

Mix so all is combined add the cranberries if using and again mix well, take the ready rolled pastry and cut in half lengthways, create two long cylinders of sausage meat down the middle of each strip of pastry leaving a pastry edge all the way around, egg wash around the edges and roll the pastry over and seal using your fingers to create two long sausage rolls.

Using a sharp knife cut the rolls roughly 3 cm in thickness lay onto a lined baking sheet brush with egg and bake in the pre heated oven for 25 minutes until the pastry is puffed golden and the sausage meat is cooked through.
