Christmas Gingerbread Decorations

 Ingredients

  • 340g plain flour
  • 115g unsalted butter
  • 100g soft brown sugar
  • 190g golden syrup
  • 3 tsp ground ginger
  • 1 tsp mixed spice
  • 1 tsp bicarbonate soda
     

Method

Pre heat oven to 180oc

In a bowl using a mixer or by hand beat the butter and sugar until creamy and pale, add the syrup, ginger, mixed spice and soda beat well then sieve in the flour, mix to rough crumb stage then form to a smooth soft dough using your hands (if using a mixer use a paddle attachment and let the machine mix to a dough for you).

Wrap in cling film and rest in fridge for 10 minutes, next put the dough between two sheets of nonstick baking parchment and roll to roughly around 1/4 inch thick, use your choice of cutter to cut tree, star and gingerbread men shapes, lay your shapes onto a nonstick baking tray or line a baking tray with nonstick parchment paper use a small cylinder cutter to cut holes in the biscuits so you can thread them with ribbon later to hang from your Christmas tree.

Bake for 8-10 minutes until golden, leave to cool then if you wish decorate with your choice of coloured icings.
