Great Turkey Gravy

So you've got your Christmas turkey cooked to perfection, but it's the finishing touches that really make for a special meal. Try our recipe for this mouth-watering turkey gravy, and we can guarantee that you'll never look back!


Turkey giblets
500ml water
3 x chopped shallots
1 x bay leaf
6 x peppercorns
2 x thyme sprigs
1 x tbsp flour
100ml red wine
1 x crushed garlic clove


Heat a splash of oil in your frying pan, and roast giblets until browned all over. Add water, shallots, a bay leaf, and the peppercorns and garlic, and bring to the boil. Skim, then simmer for around 1 hour.

Strain, then set the stock aside.

Next, take the tray your turkey was cooked in, and drain off any fat - but try to keep the cooking juices. Heat the tray on the stove top, then stir in your flour and cook for 2 minutes. Then, whisk in the red wine followed by the stock, simmer for 20 minutes then season and pass through a sieve.

Voila! Perfect turkey gravy to top off the most delicious Christmas dinner yet.
