Flavour Fest Greats: Summer Berry Gratin


3 x egg yolks
25g light brown sugar
75ml almond milk
4 tbsps. honey
25ml amaretto (optional)
500g mixed summer berries
50g flaked almonds
6 x sliced mint leaves


1. Whisk the egg yolks, sugar, honey and almond milk in a heatproof bowl set over a pan of simmering water until pale and thickened. Make sure the bowl doesn’t touch the water, and that the water only simmers!

2. Continue to whisk for around 5 minutes until thick, then add all the amaretto and whisk for a further 2 minutes. Remove from the heat and set aside to cool.

3. Pace the berries in an ovenproof dish. Add the mint to the sabayon, and spoon over the berries. Sprinkle the almonds over the berries and gratinate under a hot grill. Don't leave under for too long - the top should be golden brown!
