Hot Chilli Chickpeas
With Christmas now behind us, it's time to move on from the season of over-indulgence, and healthy snacks are a great place to start! Swap crisps and chocolate for our higher-protein hot chilli chickpeas - perfect for healthy eating on the go!
500g of canned, cooked and drained chick peas
1 tablespoon of cumin seeds
1 tablespoon of smoked paprika
1 heaped teaspoon of dried chilli flakes
1 medium onion, finely diced
2 cloves of minced garlic
Zest and juice of one lemon
2 tablespoons of chopped coriander
2 tablespoons of olive oil
1. Heat the olive oil in a large, non-stick frying pan, and add the onion, minced garlic, smoked paprika, dried chilli flakes, lemon zest and cumin seeds. Cook for two minutes over a medium heat, stirring occasionally.
2. Next, add the drained chickpeas and sautée for a further two minutes, stirring frequently.
3. Then, stir in the lemon juice and chopped coriander, and serve!
